Breakfast Cookies

Ready for breakfast? You will be with these delicious breakfast cookies... take them with you when you're in a hurry or hang out on the couch and nibble away at your leisure.

1 C. organic unbleached flour

1 C. organic rolled oats

1/4 tsp. Sodium Bicarbonate

1/2 tsp. Ground Vanilla

1 tsp. Fine Ground Himalayan Salt

1/4 C. Palm Sugar

3/4 C. Fine Cut Coconut Shavings

1/2 C. Almonds (roughly chopped)

1/4 C. Dried Berries (we like golden berries)

1/4 C. Hemp Seeds

2 Tbsp. Chia Seeds

1/2 C. dark chocolate chips

2 organic eggs

1/2 C. Coconut Oil (melted)


1. Preheat oven to 375 F.

2. Prepare baking sheet with parchment paper.

3. In a large bowl, mix all ingredients until well combined. Mixture will be pretty dense and will hold when shaped into a ball.

4. Drop golf ball sized rounds of mixture onto your baking sheet, about 2 inches apart. Slightly press each ball down before putting into the oven.

5. Bake for 15 minutes edges are golden brown.
