Great in the morning, as mid-day snack and for dessert. Toss some fruit on top and you're set!

INGREDIENTS
2 c oat milk (or milk alternative)
1 1/2 c cooked quinoa
1/4 c unrefined sugar
1/2 tsp vanilla extract
1/4 tsp himalayan salt
INSTRUCTIONS
1. In a medium saucepan, combine all ingredients and cook over medium low heat.
2. Cook for 25-40 minutes, mixing frequently. Turn down heat if it's rapidly boiling, you don't want to scorch/burn it!
3. When the pudding is smooth and creamy, remove from heat and transfer to an airtight container. (if you cooked it down too much, add a little oat milk and mix).
Serve alone or with desired toppings. We think a nice tart compote pairs well.
